Twenty years ago, I started working organic. I strive for quality. In product, in processes, but also in quality of life. Every day again. I keep experimenting and looking for improvement. In taste, texture, appearance and in methods. My credo: Less is more.
Dough is alive. In my experience working the dough mechanically as little as possible and working with 100% natural materials, gives me and my customers, a lot in return. To start with more beautiful bread with more flavor and a more delicious smell. And which certainly counts for me: true satisfaction in my work.
Sourdough is one of my specialties. I thoroughly researched the chemical process of baking. And found: as everything in life, baking too improves with the right chemistry.
This knowledge and experience should be preserved. I want to teach the bakers of the future, and work on the preservation of the craft. I share the joy of organic baking. Baking is my life.
